Aubergine peas curry
This is a tasty and flavorful Aubergine curry that is sweet and spicy and is fabulous with hot chapatis.

Method

Step 1

Cut the aubergines in halves and then into three wedges each.

Step 2

In a blender, combine spice paste ingredients with a half cup of vegetable stock and grind to a smooth paste.

Step 3

Put oil in a frying pan over medium heat. When hot, add Asafoetida powder, mustard seeds and carom seeds. When the spices crackle, add turmeric powder and immediately aubergines and peas.

Step 4

Saute for about 2 minutes. Add 1 and a half cup of vegetable stock, chilli powder, garam masala powder, jaggery, salt and the ground spice paste. Mix well, cover and cook till the vegetables are tender. Serve hot.

My Notes
1. Vary the quantity of jaggery/sugar and red chilli powder if you want to play around with the spicy flavours.
