Baked farfalle with courgettes

Baked farfalle with courgettes is easy to make and tastes delicious with a crispy topping of cheese and courgettes. Farfalle pasta is recommended. However Penne, Macaroni also work fine.


Step 1

Preheat the oven to 220 C . Cut the coutgettes into thickish rounds, withoutpeeling, and fry them lightly in the olive oil.

Step 2

Cook the pasta. Bring 1.5 litres of water to boil. Add 2 tablespoons of sea salt and pour the pasta into the briskly boiling water. Stir with a wooden fork frequently. Bring the pasta and water back to boil. Cook till the pasta is slighty undercooked - before it is cooked al-dente.

Step 3

Once ready, drain the pasta and stir in the butter and the tomato sauce. Mix well.

Step 4

Butter a deep ovenproof serving dish and spread a thin layer of pasta at the bottom, then a layer of courgettes on top. Cover these layers with thin slices of mozzarella. Dot the top with some butter and bake in the oven for 25 minutes until melted and golden brown. Serve hot.
