Chili maple glaze

A unique combination of Chili, maple syrup and mustard glaze to coat a prepared leg of ham to be roasted on high heat to result in a sweet, spicy and flavorful glaze on the meat.


Step 1

Put chili, coriander seeds and cumin seeds in a dry pan and fry for 1-2 minutes.

Step 2

Crush in a grinder and then mix with maple syrup, sugar and mustard to make a paste.

Step 3

Use to baste the cooked meat just before putting it into a preheated oven.

My Notes

1. The glaze will work well on a Turkey as well as roasted duck.
