Creamy almond sauce

This Creamy almond sauce is a uniquely flavored dip to be had with raw vegetables or grilled meats or just plain toasted bread.


Step 1

Crumble the bread in two tablespoon of milk or water until the bread is mixed, Drain excess liquid out.

Step 2

In a blender, mix the almonds, bread, vinegar and olive oil. Blend to a fine paste. In case the mixture is too dry, add some vegetable stock until you have a semi-runny paste that can work well as a spread.

Step 3

Cover thesauce with a plastic wrap and set aside for 30 minutes for the flavours to develop, Season to taste. Add some extra vinegar if you think it needs more kick. If the sauce is too thick then thin it with vegetable stock.

Step 4

You can use it as a dip with raw carrots, celery etc. Delicious with grilled shrimps or grilled asparagus or as a Pintxo with a Creamy almond spread.

1. Complement this sauce with a Romesco dip spread on toasted bread to make simple delicious Tapas.
