Creamy garlic mashed potatoes

Simple creamy garlic mashed potatoes that are a staple requirement in a lot of European and Middle eastern cuisines. Vary the milk, cream and garlic (raw or toasted in olive oil) to make different variations of this recipe.

Method

Step 1

Place the milk and cream in a small saucepan and heat until the mixture is just warm. Set it aside and keep it warm.

Step 2

Put the potatoes in a large saucepan covered with lightly saltedwater and bring them to boil. Lower the heat to medium and cook the potatoes for about 15 minutes or until they are tender. Do not overcook. Remove them from the heat and drain all the water out. Mash the potatoes.

Step 3

Crush the garlic and lightly roast in a pan with the butter and olive oil. Add the potatoes and the warm milk-and-cream mixture and mix in the saucepan over low heat until they are smooth and creamy. Season with salt and pepper. Serve hot.

My Notes

1. You may pressure cook the potatoes, peel them and then mash.
2. While serving you may sprinkle with finely chopped parsley and some red chilli oil on top.
3. Alternately you can lightly saute finely chopped red peppers in olive oil and mix with the potato mash. Looks great and tastes equally good.
