Curry Leaf and Lime parfait
An unusual parfait made with curry leaf and lime that will surprise you with its delicious flavours.


Step 1

To make the parfait, place eggs, sugar, lime zest and curry leaves in a bowl and place over saucepan of gently simmering water. Whisk until smooth, combined and thickened. Remove from heat and whisk until cool. Fold in whipped cream then pour into moulds. Place in the freezer to set.

Step 2

To make the caramel, place sugars and lime juice in a saucepan and set over high heat. Cook until dark caramel in colour. Gradually add cream and allow to boil. Add butter and salt to taste, whisk to combine and remove from heat and set aside.

Step 3

Shred the fresh coconut and roast till crunchy and brown. Set aside. Toast the puffed rice till they are nice and crunchy. Mix with the coconut and the zest of 1 lime and the palm sugar. Set aside.

Step 4

To serve, sprinkle some puffed rice in a bowl. Add parfait and drizzle with caramel.

My Notes
1. You need to make sure that the curry leaves are finely chopped as they are bitter to taste. Use a blender to finely crush them if required.
