Fruit salad with honey lime dressing
Make this fruit salad with honey lime dressing with an assorted mix of fruits that are sweet and sour with a crunchy or soft texture.

Method

Step 1

Toast walnuts on a pan until they are golden and crunchy and set aside. Toast the coriander seeds till crunchy and you can smell the aroma. Set aside. Grind the walnuts using a wooden mortar and pestle by gently crushing the walnuts till you are left with small sized pieces and not a powder. Set aside and do the same with the coriander. Mix the two ingredients together.

Step 2

Add lemon peel, thyme, honey lemon juice, whit wine, olive oil and salt to a pan and simmer gently until the liquid has reduced to a syrup. Taste and adjust the seasoning and set aside. Wait for the syrup to cool.

Step 3

chop up all the fruits as shown in the pictures. Peel the orange, remove the skin and cut in half. Mix all the fruits together.

Step 4

Line the bottom 3/4th cms of each ramekin with the walnut coriander mix. Then fill up the ramekin with the fruit mixture. Pour one to two tablespoons of the honey lemon mix all over the fruit mix and dress with a mint leaf.

Step 5

Refrigerate and serve when required.


My Notes
1.You can increase the quantity of honey if you want a sweeter syrup or the lemon if you want the dressing to be sour.
2. This dessert is best served right away as the fruits tend to go soft overnight.
3. Make extra dressing if you like the fruits to be swimming in it.
