Green beans with tomato and onion
A slow cooked tomato, onion sauce with green beans makes a great first course of a light meal. The Green beans with tomato and onion is made with al dente green beans sauteed with a slow cooked tomato, onion sauce. It is a great side dish to go along with barbecued chicken / fish.

Method

Step 1

Bring a large pot of salted water to boil. Add the beans and cook until just al dente, 6-8 minutes. Pour out of the pan and put in a bowl of ice cold water to stop the cooking and retain the fresh color of the beans.

Step 2

Heat the oilve oil in a large pan over medium-low heat. Add the onion and cook until soft but not browned, about 5 minutes.

Step 3

Add the garlic and stir for 1 minute. Add the sherry, tomato and chicken stock and cook for a few minutes. Add the boiled beans and the paprika and stir to coat with the olive oil. Slow cook for 5 minutes while ensuring that all the liquid does not evaporate. Season with salt and pepper. Serve hot or cold after dressing with parsley or spring onions.
