Green peppers with garlic

A very easy to make Green peppers with garlic salad that can then be served as a side dish of vegetables,tapas or a salad.


Step 1

Chop up the peppers into half and sprinkle some olive oil on the pan and over the peppers. Place them in an oven to roast at 180C for 30 minutes. Turn the peppers around occasionally. Roast till the skin is charred or shriveled up and comes off the peppers easily. Once done, place the peppers in a plastic bag/covered container and wait for them to cool. Remove the skins where you can and cut into thin slices and mix with extra virgin olive oil and season with salt.

Step 2

Chop the garlic into thin slivers, and deep fry/roast in olive oil till they are light brown in color. Mix with the peppers along with a tablespoon of extra virgin olive oil.

Step 3

Toast the bread slices in an oven. Place a table spoon of the pepper mix on top of each slice. Drizzle with extra virgin olive oil and serve.

My Notes

1. I never tire of this dish. It can be served as a salad or as a Pintxo. There is not much you can go wrong in this as long as you get the roasting of the peppers right.
3. The garlic slivers fried in olive oil make it special.
4.You can use any bread that is available. Baguettes are ideal. Slice the bread half inch thick to make it easy to eat. Toast them with olive oil and heap a tablespoon of the green peppers on top.
