Grilled vegetable salad
This is a  simple grilled vegetable salad which can be made using a variety of vegetables. It is a very good accompaniment to a meat dish. Charring the vegetables brings out a unique flavor along with the simple vinaigrette.


Step 1

Preheat a ridged grill pan. Prepare the marinade by mixing together all the ingredients.

Step 2

Place the vegetables on the hot grill after you sprinkle some olive oil over it. Cook each vegetable for a few minutes on each side.You will have to do this in batches. Leave the cooking of the tomatoes until last as thev will make the grill wet.

Step 3

When turning the vegetables on to the other side, baste with some more olive oil. Cool and bring to room temperature. Eat either as accompaniment to main dishes, or as a first course.

My Notes
1. You can also use green peppers, beans, spring onions in this salad as alternate vegetables.
