Jamaican Jerk rub
Jamaican Jerk rub that can be used as a barbecue marinade with meat and chicken.


Step 1

Chop up the red pepper and flash fry on high heat with some olive oil in a pan. Keep moving the red peppers around till they soften and start to darken on the sides and develop black spots.

Step 2

Cool the red peppers, mix with all the remaining ingredients and make a paste in a mixer. Rub evenly over the meat and use.

My Notes

1. Use more chilli powder if you want a spicier version.
2. This paste works wonderfully when you use it as a marinade for chicken drumsticks or chicken legs in a barbecue.
