Lamb kofta kebab

This is a classic lamb kofta kebab that can be served on a skewer or balls or flat mini burgers with all kinds of dips like yogurt garlic, spicy tomato, thick yogurt etc.

Method

Step 1

Chop the onions and lightly fry in a teaspoon of olive oil till they are soft and transparent.

Step 2

Combine the chicken, onion, garlic, egg, red chilli powder, cumin, green onions and parsley. Season with salt and mix with your hands for about 2 minutes. Cover and refrigerate for at least 30 minutes.

Step 3

Take a golf ball sized ball of the mixture, wet your hands with water and roll it and flatten at the same time into a classic kebab shape. Insert the barbecue stick through it lengthwise, seat both ends and make about 6-8 such kebabs.

Step 4

Heat a flat pan that does not have any sides so that the barbecue skewers can stick out of the pan. Place on the pan and cook for about 4-6 minutes. Keep turning the kebab till it is nice and brown on all sides.

Step 5

Serve with Yogurt garlic dip.

My Notes

1.I used easily available wooden barbecue sticks.
2. The original recipe recommends using a charcoal grill. I have used a flat plate on cooking gas to allow this recipe to be easily cooked regularly.
3. If you have time available to set up a charcoal grill, then by all means do so. That is more original and true to the spirit of Turkish cuisine.
4. These kebabs are delicious on their own. You can also serve them with warm pita bread with a sprinkling of red chilli oil and a simple tomato sauce or garlic yogurt dip.
5. Chicken Mince or beef mince can also be used. The cooking time may need to be varied by a couple of minutes.
6. They are called Kuru yogurtlu kebap in Turkish.
