Lemon mustard sauce

A unique combination of mustard, cream, sugar and lemon that needs to be made in advance and works as a perfect dip with a roasted leg of ham.


Step 1

Crush the mustard in a mortar and pestle till you crush the yellow mustard seeds. Put the olive oil, lemon juice, caster sugar, crushed mustard, English mustard and salt and pepper to taste in a bowl and vigorously mix it all together.

Step 2

Put the cream in a bowl, and stir in the lemon mustard mixture. Taste for seasoning. Add a dash of lemon juice if you like it more on the sour side. Leave to chill in a refrigerator until needed.

My Notes
1. The dip is a good accompaniment with roast duck and Turkey as well.
2. You can also use it as a spread on a toasted slice of bread.
