Malvani mutton curry
Malvani mutton curry is a classic mutton curry cooked in the style followed by people living in the coastal regions of Maharashtra and Karnataka with an emphasis on usage of fresh coconut.


Step 1

Clean the meat and wash well. Cut into large pieces.

Step 2

To make the Malvani masala, put a dry frying pan over low heat and roast the dry coconut till light brown. Set aside. In the same pan, heat oil and fry the masala ingredients separately till the color changes and you smell the spices. Coll the spices to room temperature. In a grinder combine the roasted coconut and spices and grind to make a coarse powder.

Step 3

To make the gravy, put oil in a large frying pan over medium heat. When hot, add onions and saute till golden. Add ginger-garlic paste and saute for a few seconds till aromatic and add the meat and cook for 5 minutes. Mix in the Malvani masala with Turmeric powder and salt. Fry for1 minute and stir in two cups of stock. Cover and cook over low heat, stirring occasionally till the meat is tender.

Step 4

Add more stock as required, depending on the desired thickness of the curry. Remove from heat, dress with fresh coriander and serve hot with roti or steamed rice.

My Notes
1. You can adjust the spice by reducing or increasing the chilli.
2. To save time, I prefer to use a pressure cooker to make the gravy.
