Meatballs in fragrant coconut broth

This a delightful chicken meatballs in fragrant coconut broth preparation that can be served in many ways – starters, snack or a main course with rice.


Step 1

First prepare the meatballs. Sauté the onion and garlic with seasoning in a hot oiled frying pan for about 5 minutes until soft and lightly coloured, adding the chilli flakes after a minute or two. Place the mince in a large bowl and add 1 tea spoon of salt and pepper to taste.

Step 2

Put the breadcrumbs in a separate bowl and moisten with the cream. Stir the breadcrumbs and onion,garlic mixture into the mince and combine well. With wet hands, shape the mince mixture into balls about the size of a golf ball. Transfer to a lightly greased plate or tray and chill for 30 minutes until firm.

Step 3

In a large pan, heat up 2 table spoons of Olive Oil. Brown the meatballs for 4–5 minutes, turning frequently until nicely coloured on all sides.

Step 4

Add all the spices - coriander seeds, cardamom, turmeric, cinnamon, chilli flakes, lemongrass and ginger. Heat through, stirring, until aromatic, then add the stock and coconut milk and bring to a gentle simmer.

Step 5

Turn the meatballs frequently in the sauce. Taste and adjust the seasoning as necessary. Simmer for 8–12 minutes until the sauce is flavourful and thickened and the meatballs are cooked through. Add some more stock if the sauce is too thick.

Step 6

Turn off the heat, add the lime juice and remove the meat balls. Reduce the sauce, strain and pour over the meat balls. Dress with slivers of spring onion and fresh coriander and serve hot.

My Notes

1.This is one of my favorite dishes because of its simplicity and great flavors.
2. Chicken, Lamb, Pork or a mix of any of these can be used to make the meatballs.
3. You can vary the spice as desired by adding more chilli flakes to the balls or more chillies in the sauce.
4. It is a great one-dish meal to go along with rice or noodles.
