Mix-and-Match wok fried noodles
Mix and match vegetables like peas to prepare this basic wok fried noodles. The type of noodles – flat, regular, rice or vermicelli is up to you. Spinach, Bok Choy also make for great alternatives.


Step 1

Bring the vegetable stock to boil in a large pot of water over high heat. Add the noodles to it and cook as per instructions until just cooked but still firm, about 5-6 minutes.

Step 2

Do not overcook, because the noodles will finish cooking in the wok later. Drain the noodles and spread on a rimmed baking sheet and toss with 1 teaspoon of vegetable oil.

Step 3

In a medium bowl, combine the peas, 1 teaspoon fish sauce, 1 teaspoon soy sauce, cornstarch, salt, pepper, and 1 teaspoon canola oil. Mix well and let stand 10 minutes.

Step 4

Heat a wok over high heat; the metal will have a matte appearance and a drop or two of water flicked onto its surface should evaporate on contact. Add 1 tablespoon of the oil; when the oil is hot, add the peas and stir-fry until just cooked through, 3 to 4 minutes. Transfer the peas to a plate, rinse the wok, wipe clean, and return to high heat.

Step 5

Heat the remaining 2 tablespoons oil in the wok. Add the beaten eggs, smearing them all over the bottom of the wok to coat (this helps prevent the noodles from sticking).Mash the eggs as you would while making a scrambled egg. When the egg is no longer wet, but has not yet begun to brown, add the noodles, spring onions (leaving 2 table spoons aside for the dressing). Stir and add the peas mixture and remaining fish and soy sauces. Stir-fry for 2 minutes, lifting and tossing the ingredients so they are well incorporated.

Step 6

Transfer to a warm platter and serve after dressing with the remaining spring onions.

My Notes
1. You can vary the fresh vegetables as you wish. I like to pre-cook different vegetables and toss them in the soy and fish sauce marinade before using them.
2. The same recipe works well with 1 day old rice when you are looking for some freshly cooked fried rice.
