Mushroom with garlic and olive oil

The mushroom with garlic and olive oil is a quick Tapas dish that can be served as a side or on toasted bread with a drizzle of parsley or basil.


Step 1

Chop up mushrooms in slices. Chop up onions in small pieces and crush the garlic.

Step 2

Heat up some of the olive oil and butter in a pan. Saute the onions till they are soft. Do not let them burn.

Step 3

Put in the mushrooms and cook them till just before they start to water.

Step 4

Put in the parsley and the remaining olive oil and bring the pan off the heat. Season to taste with salt and pepper. Serve warm.

My Notes

1. As a variation you may chop up the mushroom in fours(bite sized pieces).
2. An interesting alternative is to chop the garlic in slivers and roast.
3. Instead of the parsley you may drizzle with parsley oil or basil oil if this is readily available.
