Pasta with chorizo sausage

This is a spicy pasta with chorizo sausage in a rustic sauce. The chorizo sausages bring a special flavor to this pasta.


Step 1

Boil the tomatoes, remove their skins, finely chop and puree in a mixer. Chop up the chorizos into half inch pieces. You may choose to remove the skin. Cook the beans al dente in boiling salted water (1 tea spoon of salt to half a litre of water).

Step 2

Melt the butter on low heat and add the finely chopped onions and garlic till the onions are soft. Add the tomatoes with their juice and cook for 10 minutes. Add some stock if the mixture starts to dry up.

Step 3

Meanwhile, prick the sausages and cook them gently in the wine in a separate covered pan. When they are cooked add the beans, onion, tomato mixture to the sausages and et aside.

Step 4

Cook the pasta as instructed. Boil a litre of water and add one table spoon of sea salt once the water comes to boil. Add the pasta and cook till it is cooked al dente. Drain the pasta once cooked and add to the sauce. Dress with a little virgin olive oil and serve hot.

My Notes

1.You may use Penne Pasta in this recipe as an alternative
2. Depending on the brand of Chorizo, the spice will vary in this dish.
