Penne with Bolognese sauce
Penne with Bolognese sauce is a classic pasta dish that you cannot tire of. It is comforting and goes down very well with a nice glass of full-bodied red wine. The meat used and the spices can be varied to keep creating different flavors.

Method

Step 1

Mix the Tomato sauce and stock. Heat the oil and 50g/20z of the butter and add the minced onion, carrot and celery. Cook gently for about 5 minutes then add the chicken mince and wine.

Step 2

Cook gently for further 5 minutes, stirring from time to time. Now add the tomato sauce and stock mixture. Stir and add seasoning to taste. Cook gently for 15 minutes or till the stock is absorbed into the sauce.

Step 3

Stir in the cream and when it has been absorbed by the sauce remove from the heat and keep warm.

Step 4

Cook the pasta as instructed. Boil a litre of water and add one table spoon of sea salt once the water comes to boil. Add the pasta and cook till it is cooked al dente. Drain the pasta, turn into a serving dish and add the sauce in the middle.


My Notes
1. This sauce is best made with good quality fresh beef mince. In the absence of which you can use Lamb mince or a mix of lamb and pork mince.
2. You can add a spoon of chilli powder in the tomato sauce while cooking to spice things up.
3. This is called as Penne alla Bolognese in Italian.
