Pineapple fried rice
This is an essential dish to have in your inventory to include an interesting and delicious rice dish to any Thai meal. The Pineapple fried rice is best made with left over plain rice along with fresh pineapple and roasted nuts.

Method

Step 1

Soak the raisins on water for 30 minutes. Roast the cashew nuts on a pan till they are brown and crunchy. Alternately, you can deep fry them till they are light brown.

Step 2

Cook the rice in advance ensuring that the grains are just cooked and separate. Let it cool and in a bowl, stir together the rice, salt and sugar breaking up any clumps and mixing well to combine.

Step 3

Heat a wok over medium heat and fry the curry powder. Make sure that the wok is not too hot as the butter and the curry powder are quick to burn. Add the rice to the pan along with half the spring onions and stir till the rice is heated through. Add in the pineapple, raisins and cashew nuts along with the rest of the spring onions. Give it a good stir for half a minute and set aside. Dress with coriander leaves and serve hot.


My Notes
1. Pineapple fried rice is best made with left over rice. You will do well to cook the rice the previous day or well in advance so that it cools down and the grains can be easily separated.
3. Mixing the rice with the sugar, salt to season it is a great way to ensure that the rice tastes good.
4. You can use soy sauce in place of the salt for seasoning.
