Piquillo peppers with goat cheese

This is a  delicious starter of Piquillo peppers with goat cheese. The goats cheese is flavored with orange zest and the stuffing is herbed with rosemary to make delicious soft stuffed piquillo peppers.


Step 1

Combine the cheese with the orange zest, sherry vinegar,rosemary , honey, olive oil and a pinch of salt.

Step 2

Carefully open up the peppers and fill each up with the goats cheese. Then set aside.

Step 3

Transfer to a hot oven and bake until peppers have begun to darken and the cheese is beginning to melt.

Step 4

Serve warm.

My Notes

1. There is no alternative for using Piquillo peppers. These come packed in boxes /  tin cans.
2. Feta Cheese is recommended. I have tried with a combination of cheddar cheese and Paneer.
