Poached fish with vegetables
A very easy to make poached fish with simple flavours that can make a delicious and healthy meal.


Step 1

Melt the butter in a small saucepan and add all the vegetables to it. Cook till al dente and sprinkle the thyme over it. Remove from the heat and add the lemon juice and chopped olives.

Step 2

Warm up the tomato sauce and add a half teaspoon of red chilli powder and cumin powder. Stir and reduce the water in the sauce till it becomes a paste.

Step 3

Poach the fish in Court Bouillon until cooked. The flesh will go opaque. Drain and serve on top of a layer of the warm tomato sauce. Pour the vegetables over the fish and garnish with chopped parsley.

My Notes
1. Poaching fish helps to keep it moist and the technique works well with all white non-oily fishes like trout,salmon,sea bass, basa etc.
2. Hollandaise sauce or Beurre Blanc can also be used instead of the vegetable mix.
