Radicchio Salad with parmesan dressing

A really easy and flavor rich Radicchio salad with Parmesan dressing to make just in time ans serve fresh. A lot of different salad leaves can be used as replacement. The ideal salad is even and similar sized bitter leaf.


Step 1

Wash and peel the Radicchio leaves and choose small leaves that fit easily in the palm of your hand.

Step 2

Crush the Cumin, Coriander and Fennel seeds roughly using a wooden mortar and pestle. Set aside and roughly crush the walnuts. Set aside. Mix the honey and the lemon vigorously.

Step 3

Arrange the leaves on a plate. Sprinkle the walnuts over them followed by the spice mix of cumin, coriander and fennel. Pour a little honey on each of the leaves and finish it off with freshly grated Manchego Cheese.

Step 4

Serve immediately.

My Notes

1. The original recipe recommends using a bitter leaf salad. It can be tried with any salad leaf that is thick so that the mixture does not drip off and it remains easy to hold and bite into.
2. Ideally Manchego cheese is recommended. In the absence of that you can use Parmesan or any other hard cheese with flavor.
