Red and yellow peppers salad

A very easy to make red and yellow peppers salad that can then be served as a side dish of vegetables,tapas or a salad.


Step 1

Chop up the red peppers into half and sprinkle some olive oil on the pan and over the peppers. Place them in an oven to roast at 180C for 30 minutes. Turn the peppers around occasionally. Roast till the skin is charred or shrivelled up comes off the peppers easily. Once done, place the peppers in a plastic bag/covered container and wait for them to cool. Remove the skins and cut into thin slices and mix with extra virgin olive oil and season with salt.

Step 2

Wait for the peppers to cool and mix them up. Toast the bread slices in an oven. Place a table spoon of the pepper mix on top of each slice. Drizzle with extra virgin olive oil and serve.

My Notes

1. I never tire of this dish. It can be served as a salad or as a Pintxo. There is not much you can go wrong in this as long as you get the roasting of the peppers right.
2.Green Peppers can also be used in these Pintxos
3. You can add garlic slivers fried in olive oil to make it interesting
4.You can use any bread that is available. Baguettes are ideal. Slice the bread half inch thick to make it easy to eat.
