Spicy rice noodles with chicken

Spicy rice noodles with chicken is an amazingly flavourful dish. Like a lot of Thai and Vietnamese dishes it has a great balance of sweet, sour, spicy and savory flavours.

Method

Step 1

Bring to boil 2 liters of water. Once the water boils, take it off the heat and soak the rice noodles in it for 4-5 minutes. Do not soak them for longer as they will break up. Remove, drain and spread on a pan.

Step 2

Chop up the spring onion into 1 inch pieces and roast them in a pan in a tea spoon of oil till they wilt. Do not overcook as the onions will loose their fresh green color.

Step 3

Take two dried red chillies, remove the seeds and thinly slice to use as chilli flakes. Slice the peanuts and fry them a teaspoon of oil till they are light brown and glistening. We will use these to add crunch in the dressing.

Step 4

Marinate the chicken in the salt and pepper mix. Dust the chicken pieces in rice flour ad shallow fry in a pan till the chicken is cooked and crispy on all sided. This should not take more that 4-5 minutes.

Step 5

Take half a litre of water and add 1 teaspoon of salt to it once it comes to boil. Add the beans in it and cook till they are cooked al dente retaining their fresh green colour. Overcooking them will turn them to a khaki green colour. Drain immediately and douse in cold water.

Step 6

Now we are ready to make the stir fry noodles. In a wok, heat up 2 teaspoons of vegetable oil. Add the ginger and chilli to the oil and cook for a few seconds. Add the onions and beans and cook for a minute. Add the chicken stock, lime juice, sugar, fish sauce, oyster sauce and mix in the pan. Add the noodles and cook, stirring for 2 minutes. Add the chicken, peanuts and the coriander and serve.

My Notes

1.You can use a full breast cut of chicken. Slice it horizontally and cook with 2 large fillets of chicken.
2. Other crunchy green and coloured vegetables can also be used in this stir fry.
