Spring onion mash
A standard recipe for potato mash made interesting by adding spring onions to it. A great side dish to go along with barbecued chicken / fish.


Step 1

Peel the potatoes and cut into large chunks. Steam or boil the pieces for 12 minutes, or until they are tender, then drain the water away and briefly return potato to the heat,shaking the pan, to dry any excess moisture.

Step 2

Remove the potatoes and let them cool. Mash the potatoes and add the butter, milk and cream until smooth and lump free. Stir in some of the spring onion, season to taste and serve warm.

My Notes
1. You can make the mash creamier by adding more milk and cream.
2. A spoon of cheddar cheese adds a different taste to it.
