Spring onions soup
Spring onions soup is an amazingly simple and tasty soup that can be made with a few fresh ingredients.

Method

Step 1

Peel and chop up the potatoes into small pieces. Wash and chop the green onions finely.

Step 2

Melt the butter in a large pan. Cook the potatoes till they are soft. Steam the leek onions in a steamer. If a steamer is not available then cook in the same pan once the potatoes are done along with the water that is left over on the onions after washing. Add the thyme and seasoning. Cook till the onions are soft. Make sure that they continue to retain their fresh colour. Do not over cook. Set aside to cool. Puree in a mixer. Use the stock to make sure you have a smooth paste and get all the paste off the mixing bowl.

Step 3

Pour back into a clean pan, add the cream and more stock till you have the desired consistency and bring to boil by reheating gently. Add seasoning if required, dress with thyme and serve.


My Notes
1.Bread crumbs are optional. I like to lightly roast spaghetti broken into 1 inch pieces on a pan till they are light brown in color and sprinkle on top to add a bit of crunch to the soup.
2. I like to use a steamer to cook the spring onions. If you do not have one. You can cook on a pan after retaining the water on the leaves after washing them.
