Tomato chutney rice
Delicious spicy tomato chutney rice that is a meal on its own without any curries or chutneys. It has a unique flavor of its own and is very easy to make.

Method

Step 1

Brush tomatoes, capsicum and onion with 2 tsp of oil. Roast them in an oven on high for 15 minutes till the skin starts crinkling. Move them arouns as they are roasting.

Step 2

Set aside to cool and remove the skin of the tomatoes and capsicum. Peel the onion. Chop all the ingredients and in a blender, combine the roasted tomatoes capsicum and onion with red chillies, garlic, peppercorns, vinegar, sugar and salt and grind to make a smooth paste or chutney.

Step 3

Wash rice and drain. Put the remaining 2 tsp oil in a pan over medium heat. Add the prepared chutney and saute for 1 minute. Add drained rice and saute for 3-4 minutes.

Step 4

Gradually mix in 3 cups of water and cook over medium heat, stirring occasionally till rice is tender and fluffy. Serve hot.

My Notes
1. You can adjust the spice by reducing or increasing the chilli.
