Simple tomato sauce

A simple tomato sauce for use in a multitude of recipes – Spanish and Italian.

Method

Step 1

Boil a litre of water. Put in the tomatoes and boil till the skin cracks open. Hold under cold water and remove the skins. Roughly chop up the tomatoes without loosing the juice that will ooze out.

Step 2

Heat the olive oil in a pan. Add the onions, garlic, red pepper and sauté for 10 minutes till they are soft. Add the chopped tomatoes, water, salt and sugar and bring to boil. Lower the heat and leave to simmer till you have a puree. Wait for it to cool down, put in a food processor and blend until smooth. Add some extra virgin olive oil and whisk again and use as required.

Step 3

Dress with a little extra virgin olive oil and serve if using as a dip / spread for tapas.

My Notes

1. The recipe recommends boiling and then skinning the tomatoes. You may as well chop them up raw and use them as it is.
2.The Red pepper brings about a more robust color to the sauce. However it will ,make the sauce sweeter. Again, this is an optional ingredient.
