Vegetable fried rice
A colourful and tasty vegetable fired rice – An essential rice preparation to complete any Thai meal. The fried rice is best made with left over plain rice along with fresh vegetables.


Step 1

Cook the rice in advance ensuring that the grains are just cooked and separate. Let it cool and in a bowl, stir together the rice, salt, sugar, and black pepper, breaking up any clumps and mixing well to combine.

Step 2

Heat a wok over high heat until very hot. Add the rice and stir fry for a minute. Add all the vegetables except the spring onions and stir fry for a further 30 seconds.

Step 3

Add the seasoning and sauces, nuts, raisins and mix well. Toss in the spring onion and mix again.

Step 4

Transfer to a serving dish and sprinkle over the coriander leaver. You can also garnish with cucumber, lemon wedge and tomato slices. Serve hot.

My Notes
1. You cna vary the vegetables used. Crunchy and colourful vegetables are best to use. Pre-cooked snow peas or zucchini are great alternatives.
2. Fried rice is best made with left over rice. You will do well to cook the rice the previous day or well in advance so that it cools down and the grains can be easily separated.
3. Mixing the rice with the sugar, salt and pepper to season it up front is a great way to ensure that the rice is tasty on its own.
