Zucchini bell pepper onion

The zucchini bell pepper onion jam is a unique mixed vegetable spread that goes well as a dip and a spread on bread. It is a great accompaniment to meat dishes.


Step 1

Heat the oil in a large pan over medium heat. Add the onions and cook until softened but not browned. Add the zucchini and peppers. Cook stirring until the vegetables soften, adjusting the heat to ensure that the vegetables don't brown. Add a little more olive oil if the pan looks dry.

Step 2

Add the tomatoes, reduce the heat to very low and cook, covered, stirring often, until the vegetables are very soft and the zucchinis begin to disintegrate. May be up to 35-40 minutes. If the vegetables begin to stick to the pan, add a tablespoon of water.

Step 3

Add the vinegar and sugar to the Pisto and season it with salt and pepper. Let the Pisto cool to room temperature before serving.

My Notes

1.This is called as Pisto in Spain. It is the ratatouille equivalent in Spain.
2.Pisto can be served as a side to a main chicken dish. It is best easily served as a Pintxo on toasted bread.
